A fresh zesty mustardy rub

3/4 C. paprika
1/4 C. ground black pepper
1/4 C. celery salt
1/4 C. honey
1/4 C. dry mustard powder
2 tbsp. red pepper flakes
2 tbsp. onion powder
2 tsp. cayenne pepper
2 tbsp. finely minced lemon zest
2 C. chicken stock
1 C. water
1/4 C. chopped celery
1/4 C. chopped onion

Instructions: Combine ingredients. Rub into chicken, turkey or pork roast.

In the drip pan: Add 2 C. chicken stock 1 C. water chopped celery and onion and the left over dry rub.

Herb Garden Dry rub

1/4 C. molasses
2 tbsp. paprika
1 1/2 tbsp. kosher salt
1 tbsp. onion powder
1/2 tbsp. garlic powder
1/2 tbsp. chili powder
2 tsp. lemon pepper
1 tbsp. dry rubbed sage
1/2 tsp. dry ground basil
1/2 tsp. dry ground rosemary
1/2 tsp. cayenne
2 C. chicken stock
1 C. water
1/4 C. chopped celery
1/4 C. chopped onion

Instructions: Shake together in a jar. Rub into whole chicken or pork roast and let marinate.

In the drip pan: Add 2 C. chicken stock 1 C. water chopped celery and onion and the left over dry rub.

Modern day marinade

1/4 C. fresh rosemary (stems removed)
8 cloves garlic, sliced
Zest from two lemons
Zest from two limes
2 tbsp. fresh thyme
2 tbsp. fresh lime juice
2 tbsp. fresh lemon juice
1 tbsp. extra virgin olive oil
1 tsp. kosher salt
1 tsp. freshly ground black pepper
2 C. chicken stock
1 C. water
1/4 C. chopped celery
1/4 C. chopped onion

Instructions: You will need a food processor or blender. Combine ingredients and blend until a smooth paste forms. Coat the chicken or turkey and grill.

In the drip pan: Add 2 C. chicken stock 1 C. water chopped celery and onion and the left over marinade.

Perfect Prime Rib

2 tbsp onion powder
2 tbsp dried rosemary
2 tbsp black pepper
1 tbsp red pepper flakes
1 tsp tarragon
1 tsp rosemary
1 tsp garlic powder
1/4 cup paprika
1/4 cup salt
2 C. beef stock
1 C. water
1/4 C. chopped onion
1/4 C. chopped celery
1/4 cup Worcestershire sauce


Instructions: Shake together in a jar. Apply liberally to prime rib


In the drip pan: Add 2 C. Beef stock 1 C. water chopped celery and onion and the left over dry rub.

Spicy beef rub

1/4 cup paprika
1/4 cup mild or medium chili powder
1/4 cup brown sugar
1/4 cup ground black pepper
2 tbsp red pepper flakes
1 tbsp cayenne
1 tbsp garlic powder
1 tbsp salt
2 C. beef stock
1 C. water
1/4 C. chopped onion
1/4 C. chopped celery
1/4 cup Worcestershire sauce

Instructions: Shake together in a jar. Apply liberally to roast, ribs and tri tip.

In the drip pan: Add 2 C. Beef stock 1 C. water 1/4 cup Worcestershire sauce chopped celery and onion and the left over dry rub.

Spicy Dry rub

1/4 C. paprika
2 tbsp. brown sugar
1 tbsp. white sugar 
1 tbsp. sea salt
1 1/2 tsp. ground black pepper
1 tsp. cayenne
1 tsp. dry mustard
1 tsp. garlic powder
1 tsp. onion powder
2 tbsp. red pepper flakes
2 C. chicken stock
1 C. water
1/4 C. chopped celery
1/4 C. chopped onion

Instructions: Shake together in a jar. Apply liberally to whole chicken.
